Step 1: Gather Your Ingredients

Before diving into the recipe, make sure you have all the ingredients. For this Hawaiian Fudge recipe, you will need 1 1/2 cups of sugar, 1 cup of whole milk, 1 cup of cream, 1 6-ounce can of crushed pineapple, 1 cup of pecans, and 2 cups of coconut (optional).

Step 2: Prepare the Pan

Prepare a 9-inch by 9-inch baking pan by lining it with parchment paper. This will make it easier to remove the fudge later on.

Step 3: Combine the Ingredients

In a heavy-bottomed saucepan, combine the sugar, milk, and cream. Cook the mixture over medium heat, stirring continuously until the sugar has dissolved. Once the sugar has dissolved, stop stirring and let the mixture come to a boil.

Step 4: Boil and Stir

Let the mixture boil for about 10 minutes, stirring occasionally. Be careful not to let the mixture burn. If you notice the mixture starting to turn brown, lower the heat and stir more frequently.

Step 5: Add the Pineapple, Pecans, and Coconut

After 10 minutes of boiling, add the crushed pineapple and pecans to the mixture. Stir well and let the mixture continue to boil for another 5 minutes. Then, remove the pan from the heat and stir in the coconut (if using).

Step 6: Pour and Cool

Pour the mixture into the prepared pan and let it cool to room temperature. Once cooled, place the pan in the refrigerator for at least 2 hours to set.

Step 7: Cut and Serve

Remove the fudge from the pan and cut it into bite-sized squares. Serve chilled and enjoy!

Note: This recipe can also be customized to include other ingredients such as chocolate chips, matcha powder, or honey swirl. Get creative and have fun with it!

One of the best things about Hawaiian Fudge is that you can easily swap out ingredients and add your own twist to the recipe. Here are some substitutions and variations that you can try:

– Coconut: If you’re not a fan of coconut, you can leave it out of the recipe entirely. Alternatively, you can replace it with chopped macadamia nuts or walnuts for a different texture and flavor.

– Crushed Pineapple: The crushed pineapple in this recipe adds a tropical sweetness to the fudge. However, if you don’t have any on hand or don’t care for the taste, you can substitute it with diced mango, passion fruit, or papaya.

– Pecans: Pecans add a nice crunch to the fudge, but you can use any other nut that you like. Chopped almonds, hazelnuts, or cashews would all work well.

– Chocolate: While this is a non-chocolate recipe, you can certainly add some chocolate to it if you prefer. Try mixing in some chopped dark chocolate, white chocolate, or chocolate chips for a different flavor profile.

– Matcha Honey Swirl: For a unique twist on this fudge recipe, try adding a matcha honey swirl. Simply whisk together some matcha powder and honey, then swirl it into the fudge mixture before pouring it into the pan.

– Nut Bread Chocolate Fudge: This variation is perfect for those who love banana nut bread. Add 1/2 cup of mashed banana and 1/2 cup of chopped nuts (such as walnuts or pecans) to the fudge mixture. You can also sprinkle some cinnamon on top for an extra flavor boost.

– Ralphs Ice Cream Flavors: Ralphs Ice Cream is a popular brand in Hawaii, and their unique flavors can be used in this fudge recipe. Try adding some of their popular flavors, such as Haupia Pie or Macadamia Nut, to the fudge mixture for a delicious twist.

– No Bake Microwave Fudge: If you don’t want to use the stove, you can make this fudge in the microwave. Simply combine all of the ingredients in a microwave-safe bowl and heat in 30-second intervals, stirring in between, until the fudge is melted and smooth.

Incorporating these substitutions and variations can create a whole new level of deliciousness to your Hawaiian Fudge. Don’t be afraid to experiment and try out your own flavor combinations!

Hawaiian Fudge–Non Chocolate Recipe

Unique candy with fudge like texture with delightful tropical flavor but no chocolate. My husband’s co-workers expect him to bring this to the office every year at Christmastime. We had this every Christmas. Mom got it from Southern Living Cookbook that is currently falling apart and held together by various batters and rubber bands.

  • 2 1/2 cups sugar
  • 1 cup whole milk or 1 cup cream
  • 1 (6 ounce) can crushed pineapple
  • 1 cup pecans
  • 1/2 cup coconut (optional)
  1. Combine sugar, milk or cream, and well drained pineapple. Bring to a boil over medium heat and cook until mixture reaches the soft ball stage (232-240 on the candy thermometer).
  2. Remove from heat and stir in pecans and coconut if using. You can also add a few drops of green food coloring for aesthetics, but be careful or it will glow :0 and look like toxic waste 😉
  3. Let cool slightly and then beat until creamy.
  4. Pour into a greased loaf pan, cook and cut into squares.
  5. The cook time is is approximate. Experienced candy makers know it depends on the weather and how fast you can get the milk to heat up to soft ball stage.
