Before making Divinity Fudge using Kitchenaid Mixer, it is important to have all the ingredients ready. Here’s what you need:

For the Divinity Candy:

  • 2 ⅔ cups of white sugar
  • ⅔ cup of light corn syrup
  • ½ cup of water
  • 2 egg whites
  • 1 teaspoon of pure vanilla extract

For the Pecan Divinity:

  • 3 cups of white sugar
  • 1 cup of light corn syrup
  • 1 cup of water
  • 2 egg whites
  • 1 teaspoon of pure vanilla extract
  • 1 cup of chopped pecans

Make sure to use a candy thermometer to get the temperature right. You can use a stand mixer or a hand mixer to make this recipe.

The Recipe How-To

Step 1: Prepare your ingredients

Before you start making the divinity fudge, you need to have all the ingredients ready to go. You will need 2 ⅔ cups of granulated white sugar, ⅔ cup of light corn syrup, ½ cup of water, and 2 egg whites. You will also need 1 teaspoon of pure vanilla extract, 1 cup of chopped walnuts or pecans, and a candy thermometer. Make sure your ingredients are measured accurately for the best results.

Step 2: Combine the ingredients

In a medium saucepan, combine the sugar, water, and corn syrup. Cook over medium heat, stirring constantly, until the sugar dissolves. Once the sugar has dissolved, stop stirring and attach the candy thermometer to the side of the pan. Continue to cook the mixture until it reaches 260°F.

Step 3: Beat the egg whites

While the sugar mixture is cooking, beat the egg whites in a stand mixer or with a hand mixer until they form stiff peaks. This should take about 5-7 minutes on high speed.

Step 4: Add the hot syrup to the egg whites

Once the sugar mixture has reached 260°F, remove it from the heat. With the mixer running on low speed, carefully pour the hot syrup into the egg whites. Be careful not to pour the syrup onto the beaters or the side of the bowl, as this will cause the syrup to harden and become unusable.

Step 5: Beat the mixture

Once all the syrup has been added to the egg whites, increase the mixer speed to high and beat the mixture until it becomes thick and glossy. This should take about 10-15 minutes.

Step 6: Add the nuts and vanilla

Once the mixture has thickened, add the chopped nuts and vanilla extract. Mix on low speed until the nuts are evenly distributed throughout the mixture.

Step 7: Drop the divinity onto wax paper

Using a spoon or a cookie scoop, drop the divinity mixture onto sheets of wax paper. Let the divinity cool and set for at least 1 hour before serving.

Step 8: Store the divinity fudge

Store the divinity fudge in an airtight container at room temperature for up to 2 weeks. You can also freeze the fudge for up to 3 months. If the fudge becomes sticky or chewy, simply reheat it in the microwave for a few seconds to soften it up.

Follow these steps carefully, and you will have a batch of delicious homemade divinity fudge that will impress your friends and family.

Substitutions and Variations

You won’t be able to resist this melt-in-your-mouth treat.

There is always room for experimentation in the kitchen, and this recipe is no exception. Here are some substitutions and variations you can try to put your own spin on this classic divinity fudge recipe.

– Nuts: The original recipe calls for either walnuts or pecans, but you can use any type of nut you prefer. Almonds, hazelnuts, and cashews would all work well in this recipe.

– Flavorings: Aside from vanilla extract, you can add other flavorings to your divinity fudge. Try adding a few drops of peppermint, almond, or coconut extract for a different flavor.

– Sugar: You can use either granulated sugar or powdered sugar in this recipe, but keep in mind that powdered sugar may make the fudge a bit softer.

– Corn syrup: If you don’t have light corn syrup on hand, you can use either dark corn syrup or golden syrup instead. Just keep in mind that the color and flavor of the fudge may be slightly different.

– Mixer: If you don’t have a stand mixer, you can use a hand mixer or even whisk the mixture by hand. However, using a stand mixer will make the process much easier and quicker.

– No candy thermometer: If you don’t have a candy thermometer, you can test the mixture by dropping a small amount into a bowl of cold water. If it forms a soft ball, it’s ready. However, using a candy thermometer is the most accurate way to ensure the fudge sets properly.

– Pecan divinity: For a twist on the classic recipe, you can make pecan divinity by using only pecans instead of a mixture of nuts.

– Homemade candy: This recipe is perfect for making homemade candy, and it’s a great activity to do with kids. You can even make different colors by adding food coloring to the mixture.

With these substitutions and variations, you can create your own unique version of this old-fashioned divinity candy recipe. Just remember to keep track of any changes you make so you can recreate your perfect batch every time.

Once you have made your delicious divinity fudge candy, you may be wondering how to store it for later. The good news is that divinity fudge can be stored for several weeks, making it a great make-ahead dessert for special occasions or a perfect holiday treat to share with your loved ones.

To store your divinity fudge, first, let it cool completely at room temperature. Then, wrap it tightly with plastic wrap and store it in an airtight container. You can also layer it with parchment paper to prevent sticking. Store it in a cool, dry place, away from direct sunlight or heat, such as in a pantry or cupboard.

If you are traveling with your divinity fudge, place it in a container that won’t get crushed, such as a sturdy plastic container or a tin box.

When you are ready to serve your divinity fudge, remove it from the container and let it come to room temperature. Cut it into small pieces using a sharp knife. You can also sprinkle some chopped walnuts or pecans on top for added texture and flavor.

If you have leftover divinity fudge, you can reheat it by placing it in a microwave-safe dish and heating it on high for 10-15 seconds, or until it is just warm. Be careful not to overheat it, as it can become too soft and lose its texture.

In summary, storing and reheating your divinity fudge is easy and simple. By following these tips, you can enjoy your homemade candy for weeks to come.

Tips for Perfect Results

When making divinity fudge, there are some tips that can help ensure success. Here are a few things that I recommend:

Firstly, use a candy thermometer to check the temperature of the mixture. Divinity fudge requires the sugar and corn syrup mixture to reach a temperature of 250°F in order to set properly, so it’s important to keep an eye on the temperature.

Secondly, make sure to beat the egg whites until they are stiff and glossy. This will help the divinity fudge hold its shape and give it a fluffy texture.

Thirdly, use a stand mixer to make divinity fudge. While it is possible to use a hand mixer, a stand mixer is much more efficient and can help ensure that the mixture is whipped to the right consistency.

Fourthly, be sure to add the nuts at the right time. If you add them too early, they can cause the mixture to become runny. Wait until the mixture has started to thicken before adding the nuts.

Finally, be patient and don’t rush the process. Divinity fudge takes time to set properly, so it’s important to let it cool and dry completely before storing or serving. This can take several hours, so plan accordingly.

By following these tips, you can make sure that your divinity fudge turns out perfectly every time.

Before we wrap up this recipe article, I want to address some common questions and concerns that may arise when making divinity fudge. Here are some frequently asked questions and their answers to help you make the best batch of divinity fudge using the Kitchenaid stand mixer.

What is the difference between fudge and divinity?

While the classic fudge recipe calls for common baking ingredients such as sugar, butter, milk, and cream, divinity is made using sugar, corn syrup, egg whites, and artificial flavorings. This variation sets the two apart in terms of texture and taste.

What beater to use for divinity?

When making divinity candy, it’s important to use the right mixer attachment for the job. Instead of using the lighter whisk beater, opt for the heavier mixer attachment to avoid getting stuck as the candy mixture becomes harder.

Can you overbeat divinity?

Whipping up a batch of divinity can be a bit of a challenge. Achieving the perfect consistency of the egg whites and sugar syrup is crucial, but it’s a fine line between under and over-beating. Over-beating can lead to a grainy texture, so it’s important to stop right before the mixture loses its sheen. A stand mixer is recommended for optimal results. Keep these tips in mind for the perfect batch of divinity.

Why is my divinity not fluffy?

Once you have finished preparing your divinity candy, it’s important to let it rest for approximately 15 minutes. During this time, the candy will absorb more moisture and naturally harden, resulting in a sweet, fluffy treat. However, if you prefer a softer texture, you can add a tablespoon of hot water at a time and beat the candy again. Keep repeating this process until you achieve your desired consistency. This will ensure that your divinity candy is not only delicious but also has the perfect consistency for your taste buds.

Bottom Line

In conclusion, the Divinity Fudge (Kitchenaid) recipe is a must-try for any candy lover out there. Whether you’re a seasoned chef or a beginner in the kitchen, this recipe is easy to follow and will yield delicious results. With its light and fluffy texture, this old-fashioned divinity candy recipe is perfect for any occasion, from Christmas candy to homemade treats for your loved ones.
