Instructions:
Step 1: Prepare the Pie Crust

  1. In a large mixing bowl, whisk together the flour, sugar, and salt.
  2. Add the cold cubed butter and use a pastry blender or your fingers to cut the butter into the flour mixture until it resembles coarse sand.
  3. Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together and forms a ball.

  2. Add the melted butter and stir until the mixture forms clumps.

Substitutions and Variations

This pie will steal the show at any gathering.
This pie will steal the show at any gathering.

While this cherry-berry streusel pie recipe is already a crowd-pleaser, there are plenty of ways to put your own twist on it. Here are some substitutions and variations to try:

– Pie filling: If you don’t have access to tart cherries, you can substitute with pitted sweet cherries or other berries such as blueberries or blackberries. You can also mix and match different kinds of berries for a mixed berry pie. If you want to switch things up even further, try a lemon-blueberry or a sour cherry pie.

– Crumb topping: The streusel topping can also be customized to your liking. You can add chopped nuts such as pecans or walnuts, or even some shredded coconut. You can also use brown sugar instead of granulated sugar for a richer flavor. For a more savory twist, add some cinnamon or sea salt to the crumb mixture.

– Pie crust: While a traditional pie crust works well for this recipe, you can also use a graham cracker crust or a shortbread crust for a different texture and flavor. You can also experiment with different shapes for the crust, such as a lattice or a braided design.

– Make it vegan: To make this recipe vegan, use vegan butter or coconut oil instead of regular butter, and use a vegan pie crust. You can also use a vegan egg substitute such as aquafaba instead of a regular egg for the filling.

– Make it gluten-free: To make this recipe gluten-free, use a gluten-free pie crust and substitute the all-purpose flour in the filling and topping with a gluten-free flour blend.

– Blake Hill twist: If you want to take this recipe to the next level, try using Blake Hill’s Cherry Cherry Berry jam instead of the cherry pie filling. This adds an extra layer of flavor and texture to the pie.

Whatever substitutions or variations you choose, be sure to adjust the measurements accordingly and taste as you go to ensure the final product is to your liking.

Serving and Pairing

 A colorful and fruity delight.
A colorful and fruity delight.

This cherry-berry streusel pie is the perfect dessert to serve for any occasion. It’s a great treat to indulge in after a long day or to share with friends and family during a special gathering. It’s a versatile dessert that pairs well with a variety of different drinks, such as coffee, tea, milk, or even a glass of wine.

When serving this pie, I recommend adding a scoop of vanilla ice cream or a dollop of whipped cream on top. The coolness of the ice cream or the lightness of the whipped cream perfectly balances the warm, rich flavors of the pie. You can also sprinkle some cinnamon or sea salt on top for added flavor and texture.

If you’re looking for a perfect pairing, try serving this cherry-berry streusel pie with a cup of hot tea, especially a fruity herbal blend. The tartness of the cherries and the sweetness of the berries complement the floral notes of the tea, creating a well-rounded and satisfying experience.

For a more decadent dessert pairing, try serving this pie with a glass of red wine. The cherry and berry flavors in the pie pair well with a full-bodied red wine, such as a Cabernet Sauvignon or Merlot. The tannins in the wine also help to cut through the richness of the pie, making it a perfect combination.

No matter what you choose to pair it with, this cherry-berry streusel pie is sure to satisfy any sweet tooth and leave a lasting impression on your taste buds.

Tips for Perfect Results

Streusel topping: the cherry on top!
Streusel topping: the cherry on top!

To ensure that your Cherry-Berry Streusel Pie turns out perfectly, here are some tips to keep in mind:

1. Use cold ingredients: When making the pie crust, make sure your butter and water are cold. This will help create a flaky crust that melts in your mouth.

2. Don’t overwork the dough: When mixing the dough for the pie crust, be careful not to overwork it. Overworking the dough can make it tough and chewy.

3. Use a mix of tart cherries and sweet berries: Mixing tart cherries and sweet berries gives the pie a nice balance of sweet and tart flavors.

4. Use cornstarch to thicken the filling: Cornstarch is a great thickener for pie fillings. It thickens the filling without making it too gloopy or starchy.

5. Make sure the streusel is crumbly: The streusel topping should be crumbly and not too wet. If it’s too wet, it won’t bake properly and will end up clumpy.

6. Sprinkle with sea salt: Sprinkling a little sea salt on top of the pie before baking can enhance the flavors and bring out the sweetness of the berries.

7. Let the pie cool before slicing: It’s important to let the pie cool for at least an hour before slicing. This will give the filling time to set and prevent it from oozing out when sliced.

8. Serve with a dollop of whipped cream: A dollop of whipped cream on top of each slice of pie adds a nice touch of sweetness and creaminess.

By following these tips, you’ll be able to make a delicious Cherry-Berry Streusel Pie that will impress your family and friends.

Cherry-Berry Streusel Pie Recipe

Suggested by a pie that Publix used to sell, one that was better than either a cherry or blueberry pie alone. This one starts with LubyLubyLuby’s Best Cherry Pie recipe (thank you, Luby) and finishes with a streusel topping. If you don’t have a pie crust handy, just bake the filling and streusel in a glass or ceramic baking dish and serve it as a crisp/cobbler/crurmble-esque dessert with a scoop of vanilla ice cream.

Pie filling

  • 2/3 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1/2 tablespoon butter, softened
  • 1 (14 1/2 ounce) can pitted tart cherries
  • 2 -3 drops almond extract
  • 1/4 teaspoon vanilla
  • 1 (21 ounce) can blueberry pie filling (Comstock is what I find locally.)
  • 1 single-crust 9 inch pie shell, homemade…or not. I use not.

Streusel

  • 1 1/4 cups flour
  • 6 tablespoons light brown sugar
  • 1/4 cup granulated sugar
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup butter, soft, but not melted
  • 1/4 teaspoon vanilla
  1. Preheat oven to 400 degrees.
  2. FILLING: Combine sugar, cornstarch and salt in a mixing bowl.
  3. Drain cherries, pouring 1/4 cup of the juice into a small bowl or measuring cup. Set the cherries aside. Add almond extract and vanilla to the juice in the cup.
  4. Add the liquid to the dry ingredients in the mixing bowl and mix well. Add the butter and use the back of a fork to smoosh it up into smaller pieces that will spread themselves around the mixture.
  5. Stir in the cherries and let the mixture stand for 15 minutes. While it’s sitting there, taunting you, make the streusel:
  6. STREUSEL: Combine all dry ingredients in a bowl, then add the butter and vanilla. Cut the butter into the dry ingredients with a pastry blender or two knives until mixture looks crumbly – like a bowl of gravel. (Bad analogy. Sorry.) Set the streusel aside. *Note to self: Next time, make the streusel with cold butter and the food processor, do it ahead of time, and store it in the refrigerator. That way, you can stand around and watch the cherries in that bowl and won’t miss out on any of the action.*.
  7. Back to the FILLING: Stir the blueberry pie filling into the cherries.
  8. Pour filling into pie crust and sprinkle the streusel as evenly as possible over the top. Bake for 50 to 55 minutes.
  9. Note: if you decide to go make it without the pie crust, less baking time is required. It will be done when it’s bubbly and the streusel is browned – 40-45 minutes.
