Preparing the Batter

To make this traditional Albanian dessert, we will need to start by preparing the batter. In a bowl, mix together 2 cups of flour and 1 teaspoon of baking soda. In a separate bowl, beat 2 eggs with 1 cup of sugar using an electric mixer until the mixture is smooth and creamy. Then, add in 1 cup of melted butter and 1 tablespoon of vanilla extract to the egg mixture and mix well.

Adding the Honey and Nuts

In a small saucepan, heat 1 cup of honey and 1 cup of water over medium heat until they are well combined. Then, add in 1 cup of chopped nuts (we suggest walnuts or almonds) and stir to combine.

Mixing and Baking the Cake

Next, pour the honey and nut mixture into the bowl with the egg mixture and stir well to combine. Gradually, add the flour mixture to the bowl, stirring until everything is well combined. Make sure to mix everything thoroughly.

Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter and pour the batter into the dish. Bake for approximately 30-40 minutes, or until the cake is golden brown and a toothpick inserted in the center comes out clean.

Making the Syrup

While the cake is baking, you can prepare the syrup. In a saucepan, combine 1 cup of honey, 1 cup of sugar, and 1 cup of water. Bring the mixture to a boil over medium-high heat, stirring constantly. Then, reduce the heat to low and let the syrup simmer for about 10 minutes, or until it thickens slightly.

Serving the Cake

Once the cake is done baking, remove it from the oven and let it cool for a few minutes. Then, pour the syrup over the cake, making sure to cover every inch of it. Let the cake cool completely before serving. Garnish with chopped nuts for an extra crunch and flavor.

While the recipe itself is not complicated, here are some tips and tricks to ensure that your Shëndetlie Me Mjaltë turns out perfectly every time.

Firstly, it’s important to note that the nuts used in this recipe can vary depending on your preference. Some recipes call for almonds, while others use walnuts or hazelnuts. Regardless of which nut you choose, it’s important to evenly chop them before adding them to the batter. This will ensure that the cake bakes evenly and has a consistent texture throughout.

Another tip for perfect results is to make sure that you mix the batter thoroughly. The recipe calls for eggs, sugar, honey, and butter to be beaten together until smooth. It’s important to take your time with this step and make sure that everything is well combined. You can use a stand mixer or a hand mixer, but be sure to scrape down the sides of the bowl periodically to ensure that all of the ingredients are fully incorporated.

One of the secrets to a perfect Shëndetlie Me Mjaltë is to use high-quality honey. Traditional Albanian honey is preferred, but any high-quality honey will do. When it comes to baking the cake, it’s important to preheat your oven to the correct temperature and to bake the cake for the recommended amount of time. The recipe calls for a baking time of 35-40 minutes, but it’s important to keep an eye on the cake towards the end of the baking time to make sure it doesn’t overcook. You can check the cake’s doneness by inserting a toothpick into the center. If it comes out clean, the cake is done.

Shëndetlie Me Mjaltë Recipe

This recipe is from my blog, Desserts from Around the Globe, where I’m trying to prepare one dessert from every country of the world. Shëndetlie me mjaltë is a pastry typical for Albania – the second country from my blog.

  • 200 g sugar
  • 2 eggs
  • 120 g butter, at room temperature
  • 80 g nuts, of your choice (either almonds, pistachios or walnuts)
  • 3 tablespoons honey
  • 1 teaspoon baking soda
  • 500 g flour
  • 3 cups water
  • 3 cups sugar
  • vanilla, to taste
  1. Beat the eggs and the sugar with an electric mixer until the mixture thickens and turns a very pale yellow. Add butter, 3/4 of the nuts (ground or chopped), honey, soda and flour.
  2. Continue by kneading the dough with your hands, but it should remain soft and fluffy (not like cookie dough).
  3. Put the dough in a pan, smooth it with a spatula and bake at 180°C for 35-40 minutes or until the surface is light brown. Take it out of the oven and let it cool.
  4. For syrup, boil the water with the sugar and some vanilla for about 7 minutes, until it thickens, and continue stirring it the entire time. Let it cool down for a bit, until it is mildly warm and still relatively liquid.
  5. When the pastry is cool, pour the syrup over and sprinkle everything with the remaining nuts. Let the whole thing cool down, so the syrup really thickens.
