The Recipe How-To

“The perfect side dish for any summer BBQ”

Now comes the fun part – putting together this delicious red skin potato salad recipe! With a little bit of chopping, boiling, and mixing, you’ll have a creamy and flavorful salad in no time.

Ingredients

Make sure you have all of your ingredients ready before you start cooking. Here’s what you’ll need:

  • 2 pounds small red potatoes, scrubbed and cut into bite-sized pieces
  • 1/2 cup mayonnaise
  • 1/2 cup light sour cream
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1/4 cup finely chopped red onion
  • 1 stalk celery, finely chopped
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh dill weed

Cooking the Potatoes

First of all, you need to cook the potatoes. Put them in a large pot and cover with cold water. Bring the water to a boil, then reduce the heat and simmer for about 10-15 minutes, or until the potatoes are fork-tender.

Once the potatoes are cooked, drain them well and let them cool slightly. You want them to be warm, but not hot.

Making the Dressing

While the potatoes are cooking, it’s time to make the dressing. In a small bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, dijon mustard, red onion, celery, salt, and black pepper. Taste and adjust the seasoning as needed.

Assembling the Salad

Now it’s time to bring everything together. In a large bowl, combine the warm potatoes and the dressing. Toss gently to coat the potatoes evenly.

Add the chopped dill weed and toss again. Taste and adjust the seasoning if needed.

Serving and Pairing

Your creamy red skin potato salad is now ready to serve! It’s perfect as a side dish for grilled meats or burgers, or as a stand-alone lunch option. You can even top it off with some crispy bacon bits or sliced hard-boiled eggs for an extra protein boost.

Tips for Perfect Results

  • If you want to make this salad ahead of time, cook the potatoes and make the dressing separately. Then, toss everything together just before serving.
  • For a tangy twist, try substituting white wine vinegar for the apple cider vinegar.
  • If you prefer a creamier salad, add a little more mayonnaise or sour cream to the dressing.
  • Don’t overcook the potatoes – you want them to be tender but still firm enough to hold their shape in the salad.

Substitutions and Variations

“Fresh ingredients and a burst of flavors in every bite”

The beauty of potato salad is its versatility, and this creamy red skin potato salad recipe is no exception. Here are some simple substitutions and variations that you can make to switch up the flavors and textures:

– Potatoes: While we recommend using small red potatoes for their tender texture and thin skin, you can also use larger red-skinned potatoes or Yukon gold potatoes. Just make sure to cut them into bite-sized pieces so they cook evenly.

– Dressing ingredients: If you don’t have apple cider vinegar on hand, you can use white vinegar or white wine vinegar instead. Dijon mustard can be swapped with yellow mustard or whole-grain mustard for a different flavor profile. You can also use Greek yogurt instead of sour cream for a tangier dressing.

– Onion: Red onion is a great addition to this salad for its mild flavor and beautiful color. However, you can also use sweet onion or shallots if you prefer.

– Bacon: For a smoky, savory twist, try adding some crumbled bacon to the salad. You can cook it in a skillet until crispy before adding it to the mix.

– Herbs: Dill weed is a classic herb for potato salad, but you can also experiment with other fresh herbs like parsley, chives, or basil.

– Eggs: Hard-boiled eggs add protein and richness to the salad, but you can leave them out if you’re looking for a vegetarian or vegan option.

– Dressing consistency: If you prefer a lighter dressing, you can reduce the amount of mayonnaise and sour cream and add more vinegar or olive oil. Conversely, if you like a creamier texture, you can increase the amount of mayonnaise and sour cream.

With these substitutions and variations, you can customize the potato salad to your liking and create a new flavor every time you make it.

Make-Ahead, Storing and Reheating

“Get ready to impress your guests with this simple yet delicious recipe”

One of the best things about this creamy red skin potato salad recipe is that it can be made ahead of time and stored in the fridge until you’re ready to serve it. In fact, it’s recommended that you make it a day in advance so that the flavors have time to meld together.

To store the potato salad, transfer it to an airtight container and place it in the fridge. It will keep fresh for up to 3-4 days. However, keep in mind that the longer the potato salad sits, the more it will absorb the dressing, which could result in a slightly less creamy texture.

When it’s time to serve the potato salad, give it a good stir to redistribute the dressing and flavors. If the potato salad seems a bit dry, you can add a tablespoon or two of mayonnaise or sour cream to moisten it up.

If you have leftovers, you can reheat the potato salad in the microwave or on the stove. To reheat in the microwave, place the potato salad in a microwave-safe dish and heat it on medium power for 2-3 minutes, stirring occasionally. To reheat on the stove, place the potato salad in a saucepan and heat it over low heat, stirring constantly until warmed through.

Overall, this creamy red skin potato salad recipe is a great make-ahead dish that can be stored and reheated with ease. Just be sure to keep it in an airtight container in the fridge and give it a good stir before serving.

“A family favorite that will have everyone asking for seconds”

When it comes to making the perfect red skin potato salad, there are a few tips and tricks that can make all the difference in the end result. Here are my top tips for achieving the creamiest and most flavorful potato salad that will have everyone asking for seconds.

First and foremost, it’s important to choose the best red potatoes for your salad. Look for small to medium-sized potatoes that are firm and free of any blemishes. It’s best to scrub the potatoes thoroughly with a brush to remove any dirt or debris before cooking.

When boiling the potatoes, be sure to start with cold water and bring it to a gentle boil. This will ensure that the potatoes cook evenly and don’t become mushy. Add a teaspoon of kosher salt to the water to enhance the flavor of the potatoes.

To prevent the potatoes from becoming waterlogged, it’s important to not overcook them. Check the potatoes after 10-12 minutes of boiling by piercing them with a fork. They should be tender but still hold their shape. Drain the potatoes and let them cool slightly before cutting them into bite-sized pieces.

Another key ingredient in a creamy and flavorful potato salad is the dressing. For the best results, mix together equal parts of mayonnaise and sour cream. Add in a tablespoon of Dijon mustard and a tablespoon of apple cider vinegar for tanginess. Season the dressing with salt, pepper, and a teaspoon of dill weed for an herby flavor.

When combining the dressing with the potatoes, it’s important to do so gently to avoid mashing the potatoes. Fold the dressing into the potatoes along with finely chopped onions and celery for added crunch and flavor. For an extra pop of color and flavor, sprinkle chopped fresh parsley or green onions on top.

Finally, for the best results, it’s recommended to let the potato salad chill in the refrigerator for at least an hour before serving. This will allow the flavors to meld together and the potatoes to absorb the dressing. Serve the potato salad with your favorite grilled meats or as a side dish at your next barbecue or potluck.
