  • 1 tablespoon honey
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground turmeric

  • 2 garlic cloves, minced
  • Juice of 1 lime
  • Freshly ground black pepper
  • Salt to taste

For the chicken skewers:

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red onion, cut into wedges
  • 1 green chili, sliced
  • 1 red pepper, cut into 1-inch pieces
  • Fresh coriander leaves, chopped

You will also need wooden or metal skewers for grilling. If you are using wooden skewers, make sure to soak them in water for at least 30 minutes before grilling to prevent them from burning.

The Recipe How-To

Now that we have gone through the ingredients list in the previous section, it’s time to dive into the recipe itself. In this section, I will guide you through the steps to make the perfect Marinated Chicken Brochettes recipe.

First, let’s prepare the chicken. Cut 1 1/2 pounds of boneless, skinless chicken breasts into 1-inch cubes. Then, place the chicken in a medium bowl and add 2 tablespoons of olive oil and 2 tablespoons of low-sodium soy sauce. Toss the chicken to coat it evenly with the marinade.

In a separate bowl, whisk together 1/4 cup of extra-virgin olive oil, 2 tablespoons of lemon juice, 1 clove of minced garlic, 1 tablespoon of smoked paprika, 1 teaspoon of ground turmeric, 1/2 teaspoon of fresh ground black pepper, and 1/4 teaspoon of salt.

Add the marinade to the bowl with the chicken and toss to coat well. Cover the bowl with plastic wrap and marinate the chicken in the fridge for at least 1 hour or up to 24 hours.

When you are ready to cook the chicken, preheat your grill or broiler on high heat. Thread the chicken cubes onto skewers, alternating with red onion, green chili, and red pepper.

Grill the marinated chicken skewers for about 10-12 minutes, turning them occasionally until the chicken is cooked through and slightly charred on the outside. If you are using a broiler, broil the skewers for about 8-10 minutes, turning them once halfway through cooking.

Once the grilled chicken is ready, remove the skewers from the grill or broiler and let them rest for a few minutes. Serve the marinated chicken brochettes hot with some fresh coriander leaves on top. You can also squeeze some lemon juice over them for an extra tangy flavor.

Substitutions and Variations

If you prefer, you can use chicken thighs instead of chicken breasts for this recipe. You can also experiment with different types of marinades, such as a honey soy sauce marinade or a teriyaki chicken marinade.

Substitutions and Variations

This recipe is versatile and can be customized to your liking. Here are some substitutions and variations you can try:

– Chicken: Instead of using skinless chicken breasts, you can use boneless, skinless chicken thighs or even chicken tenders. You can also use a combination of different cuts of chicken for added flavor and texture.

– Marinade: The marinade for this recipe is a blend of buttermilk, soy sauce, olive oil, lemon juice, and spices. If you don’t have buttermilk, you can use plain yogurt or even milk with a tablespoon of lemon juice. You can also add different spices and herbs to the marinade, such as smoked paprika, cumin, or fresh thyme.

– Vegetables: You can add different vegetables to the skewers, such as bell peppers, cherry tomatoes, zucchini, or mushrooms. Make sure to cut them into similar-sized pieces for even cooking.

– Spiciness: If you like your food spicy, you can add more green chilies or red pepper flakes to the marinade. Alternatively, you can serve the skewers with a side of hot sauce or chili paste.

– Ethnic twists: You can give this recipe an ethnic twist by using different marinades and spices. For example, you can make Greek chicken skewers by marinating the chicken in yogurt, lemon juice, garlic, and oregano. Or you can make teriyaki chicken skewers by marinating the chicken in a mixture of soy sauce, honey, ginger, and garlic.

– Cooking methods: If you don’t have a grill, you can still make these chicken skewers by using a grill pan or broiling them in the oven. You can also cook them on a stovetop griddle or a George Foreman grill.

Tips for Perfect Results

To ensure that your marinated chicken brochettes come out perfect every time, here are some tips to follow:

Firstly, make sure to marinate your chicken for at least 2 hours, but overnight is even better. This will allow the flavors to penetrate the meat and make it more tender.

Secondly, when threading the chicken onto the skewers, make sure to leave a bit of space between each piece. This will allow the chicken to cook evenly on all sides.

Thirdly, soak the wooden skewers in water for at least 30 minutes before using them. This will prevent them from burning on the grill.

Fourthly, when grilling the chicken brochettes, preheat your grill to medium-high heat and brush the grates with oil to prevent sticking. Turn the skewers frequently to cook the chicken evenly.

Fifthly, don’t be afraid to experiment with different marinades and seasonings. Try adding smoked paprika or honey soy sauce for a different twist on the traditional recipe.

Lastly, let the chicken brochettes rest for a few minutes after grilling to allow the juices to redistribute throughout the meat. This will ensure that each bite is juicy and flavorful.
