Recipe: Roasted Cauliflower Soup from my #LiveCookshop 2.0 

So last Saturday I did my first ever live cookshop video on my Facebook page where I made my super healthy gluten free buckwheat crepes. I’m going to upload recipe very soon, till then you can check the video on my fb page because everything that goes on Facebook apparently remains there and never comes down so check it out!

And for today, I bought this good looking fella and roasted it to make this tasty and healthy Roasted cauliflower soup and  you can see the video on my fb page

Writing the recipe down for you guys –

Roasted Cauliflower Soup

You need:

1 head medium size cauliflower, cut into small florets

1 potato

2-3 cloves of garlic

1 small onion/ half a leek, roughly chopped


Pinch of brown sugar

Pinch of chilli flakes

Few thyme sprigs

2 cups stock

½ cup milk (dairy/almond/soy/coconut)

Black pepper + olive oil to drizzle on top

You need to:

Preheat the oven at 200 C. Lay out cauliflower, potato, garlic, onion/leek in a roasting tray. Drizle some oil over it and add salt, brown sugar, chilli flakes, thyme and let it roast in oven until cauliflower is cooked through and has got lil color on them.

Puree the cooked cauliflower with little stock and transfer to a pan. Add more stock and bring the soup to boil. Add some milk and cook for another 3-4 minutes while whisking continuously. Adjust the seasoning and transfer to a serving bowl. Drizzle some olive oil on top, crack some black pepper and serve warm.
